I just had a friend ask me what I thought about using an ultrasonic cleaner for his restaurant. I was actually stunned that he did not already have one, quite frankly. And I know if he was wondering about using one, then there are surely other small restaurant owners that are wondering the same thing.
Food contamination is always a risk in a restaurant, but that risk is minimized with proper cleaning. Most of the dishwashers you see in kitchens will do a great job on plates, glasses, and silverware, but having worked in restaurants, I have seen kitchen equipment run through and still have remnants of what we were prepping on the equipment.

But I have seen parts go through a regular dishwasher two and three times and still not be properly cleaned.
Pasta making and baking are their own animal. Many of the pieces of equipment that are used are fine, twisty, and have plenty of little spots where flour or other products can get caught, and even a dishwasher does not always get them out. These are all ideal for an ultrasonic cleaner. The microscopic bubbles that are formed during the cavitation process will get into every crack and crevice, removing every last remnant of food that had remained on the equipment.
